Steps to Make Lotus Seed, Lily Bulb and Tremella Sweet Soup
Soak the Tremella in water until it softens, and remove the yellow part.
Soak the dried Lily Bulbs and Lotus Seeds in water for half an hour, wash away impurities. I chose the peeled Xiang Lotus Seeds, which have a clearer soup color than the ones with red skin.
After the water boils, add all the ingredients and cook on high heat for five minutes. Be careful not to let it boil over.
I like to use yellow rock sugar for making sweet soup, as it contains more trace elements and minerals than regular crystal sugar.
After boiling for five minutes on high heat, turn down the heat and simmer slowly for one to one and a half hours.
