Steps to Make Ma Lai Gao
Prepare the necessary ingredients
Place the eggs in a mixing bowl, use an electric mixer to beat until foamy, then add brown sugar
Gradually pour vegetable oil into the egg mixture in two to three batches, mix well with the mixer, ensuring each addition is fully incorporated before adding the next to prevent separation of oil and water
Beat at high speed until the batter can hold a clear pattern on the surface for about 15-20 minutes, indicating it’s ready
Gradually fold in sifted flour, baking powder, and baking soda using a rubber spatula, mix gently without stirring in circles
Line the bottom of a mold with parchment paper, pour the batter into the mold, smooth the surface, cover with plastic wrap, and let it ferment in the refrigerator for a few days if possible, or at least 12 hours for a darker color
Steam the batter in the mold over high heat for about 30 minutes, adjusting the time based on the size of the mold
When serving, invert the cake onto a plate and cut into desired shapes, such as classic triangles
