Steps to Make Authentic Tomato Hot Pot Base at Home
Wash the four tomatoes and cut them into flower-shaped pieces. Put them in a container with hot water and let them sit for 10 minutes to remove the skin.
Take 2 peeled tomatoes and cut them into small pieces. Put them in a food processor and blend them into tomato juice. Pour the juice into a bowl and set it aside.
Cut the remaining tomatoes into pieces and set them aside.
Wash the onion and cut it into small pieces. Cut the ginger into small pieces. Put them in a food processor and blend them into onion sauce. Set it aside.
Heat up some oil in a pot and add the onion sauce. Stir-fry it over low heat for 2 minutes.
Pour the tomato juice into the pot and simmer it over low heat for 10 minutes.
Add 6 pieces of rock sugar, 1 tablespoon of salt, 1 tablespoon of MSG, and 2 tablespoons of tomato sauce. Stir-fry until the rock sugar melts. Set it aside.
Peel and slice the garlic and set it aside.
Heat up some oil in a pot again and stir-fry the sliced garlic until it turns slightly yellow.
Add the tomato pieces and stir-fry them with 1 tablespoon of salt and 1 tablespoon of MSG until the tomatoes become soft and release their juice.
Add the tomato sauce and stir-fry until everything is well mixed.
Add some water or broth to the pot and the authentic tomato hot pot base is ready.
