After soaking the pork ribs to remove blood, drain the water and cut into small pieces of about two centimeters (I cut them a bit too big, smaller ones would be better for frying), chop two cloves of garlic, a small piece of ginger, and two scallions into small pieces.
Put the pork ribs in a container, add the chopped scallions, ginger, and garlic, sprinkle with half a teaspoon of pepper, a teaspoon of Sichuan pepper powder, chili powder, a teaspoon of five spice powder (too much will not taste good), half a teaspoon of chicken essence, a teaspoon of granulated sugar, and an appropriate amount of salt. Stir well and marinate for half an hour to an hour (the longer the better for flavor).
After marinating, add flour (enough to coat all the pork ribs), starch in a 2:1 ratio, an egg white, and four to five drops of sesame oil or cooking oil (to prevent the batter from clumping and make it smoother).
