Detailed steps for making Mantou
Put water in the flour, make a hole, add yeast, cover, start the kneading and fermentation program, 1:30 minutes
Ferment until it is 2-3 times larger than the original size, poke a hole in the middle with chopsticks, and it won’t bounce back, indicating that it is well fermented.
Take out and knead into a round shape,
Divide the dough in half, take one half, and divide it into three equal parts. Put red yeast rice powder, matcha powder, and purple sweet potato powder respectively. (The remaining dough is used to make white Mantou)
Knead evenly,
Take two white doughs and knead them into a round shape. The top is small and the bottom is slightly larger. Stack them together,
Take a little bit of red yeast rice powder dough, pinch it into a hat shape, and put it on top of the dough
Take a little bit of each color, knead it into a long and thin strip, and put the green one in the middle,
And put them together, roll them into a long scarf with a rolling pin,
Wrap it around the neck
Press the red beans to make the eyes, take a little bit of red dough and pinch it into a pointed shape for the nose, and use the green one for the button,
The colors can be freely matched, and some can be made into canes, socks, and placed as shown in the picture. The remaining dough is used to make white Mantou. (Use your imagination to make whatever you want) Ferment for the second time, and the Mantou will visibly increase in size. Steam in boiling water for about 18 minutes, and let it sit for about 3 minutes after steaming. It’s done!
