Maple Madeleine Cooking Steps
Prepare all ingredients, melt unsalted butter over water bath.
Whisk whole egg with fine sugar until sugar dissolves. (Can heat over warm water)
Sift low-gluten flour and baking powder into egg mixture, stir until smooth.
Add maple syrup gradually, mix well, then add melted unsalted butter in batches. Mix well.
Transfer batter to a piping bag, seal and refrigerate for half an hour.
Grease the mold, dust with flour, discard excess flour (not enough in the picture!). Preheat oven to 180°C for ten minutes.
Pipe batter into the mold, bake in the oven (180°C) for 12-15 minutes.
My husband prefers the original flavor, but if you like, you can dip in white chocolate, then sprinkle with dark chocolate and nut crumbs. Enjoy while hot!
