Detailed Steps for Cooking Marinated Chicken Feet
Wash the chicken feet.
Trim the nails as they can be smelly, so make sure to remove them.
Blanch the chicken feet in cold water.
Remove the scum after blanching.
Rinse off any surface impurities with clean water.
Prepare a portion of cooking spices: 2 star anise, 5 cloves, around 30 peppercorns, 2 pieces of cassia bark, some dried tangerine peel, 2 grains of Amomum villosum, some galangal, 3 bay leaves, and 1 piece of ginger.
Add water and the cooking spices, then add the chicken feet.
Bring to a boil over high heat, then simmer for 20 minutes, and add salt.
Simmer for another 5-10 minutes.
The marinated chicken feet will be tender and flavorful. If you prefer them chewier, cook for a shorter time.
