Detailed Steps for Cooking Marinated Clams – Refreshing and Appetizing Dish for Summer (Low-Temperature Freezing Method)
Rinse the fresh clams, soak them in water with salt and oil for 2 hours to remove sand;
After removing sand, rinse the clams again, discard any dead or broken clams (can be used for soup);
Soak in 20g of vodka and a little water for another 10 minutes, drain the liquid, and freeze in the freezer for 4-6 hours;
Finely chop garlic, ginger, and chili, add to the frozen clams, and add 10g of wine and 100g of soy sauce;
Pour in cold boiled water (or purified water) just enough to cover the clams, taste and adjust seasoning with fish sauce if the salty taste is not enough;
Stir well with clean, oil-free chopsticks, refrigerate for at least 12 hours;
The finished product should have slightly opened clams.
