Detailed Steps for Making Matcha Honey Red Bean Towel Roll
Beat eggs with caster sugar until well mixed
Add whole milk and mix well
Sift in cake flour and matcha powder, then fold in gently in a Z pattern
Add pre-melted butter and mix well, layer the batter 3 times through a sieve to make it smoother, then refrigerate for half an hour
Spoon the batter onto a mold and spread evenly (old photo, forgot to take a new one)
Microwave on high for about 1 minute 30 seconds, if not heated enough, add 10 seconds at a time (old photo, forgot to take a new one)
Place the layered pastry on a cooling rack to cool (old photo, forgot today)
Layer the pastry repeatedly until all the batter is used up; for this towel roll, I made the layers slightly thicker than for regular layered pastry, adding more batter each time – I made 15 layers in total
Stack 5 layers of pastry, spread whipped cream between each layer
Place some honey red beans on the cream, fold the top and bottom edges in, then roll up from the left side
Sprinkle matcha powder on the surface for decoration (I prefer wrapping the rolls in parchment paper instead of directly sprinkling matcha powder, so I only sprinkled on one roll, the others were wrapped in paper)
