Steps for making Matcha Pudding
Prepare all the ingredients: 200g milk, 1 and a half eggs (half is egg yolk), 50g granulated sugar, 50g whipping cream (I used Nestle’s), 2/1 teaspoon matcha powder, and pudding cups.
Put 1/2 teaspoon of matcha powder in a large bowl! Be careful not to put too much!
Pour the milk and granulated sugar into a milk pot, heat over low heat and stir constantly until the sugar melts and the milk steams!
Pour the heated milk into the large bowl with matcha powder!
Stir well! I took the photo with my phone, so the color is not very good, but it’s actually light green!
Mix the eggs and egg yolks together!
Slowly pour the mixed egg liquid into the milk mixture. This step is very important. Make sure the milk has cooled down before pouring in the eggs, otherwise it will become scrambled eggs!
Pour in the whipping cream and stir well! (There are more egg crystals in this one, but they will be filtered out later!)
Stir well!
Filter the pudding mixture 2-3 times!
Let the filtered pudding mixture sit for 30 minutes or more!
Pour the pudding mixture into the small pudding cups, place them in a baking pan, pour water (preferably hot water) into the baking pan until it reaches 1/3 of the height of the pudding cups. My baking pan is relatively low, so I had to make do with less water. Put the baking pan in a preheated oven at 165 degrees for about 30 minutes, until the pudding mixture is completely solidified!
This is the finished Matcha Pudding! It has a light matcha flavor, which I really like! The actual color is a light green, a very refreshing color! My photography skills are limited, so the color looks a bit pale. I couldn’t capture the beautiful light green color!
