Steps to Make Matcha Towel Roll
Prepare all ingredients, forgot to add the prepared red bean paste
Whisk one egg with milk until well combined
Mix matcha powder with pancake mix, sift into the milk mixture
Hand mix batter until smooth, then add melted butter
Stir batter until smooth without lumps, let it rest for about fifteen minutes
Sift the rested batter
Scoop a spoonful of batter into a Swiss roll pan, the pan should not be too large (use a small-sized pan)
Shake the pan to evenly spread the batter, then place the pan in the microwave
Heat in the microwave on high for one minute, if the batter around the edges of the pan is not cooked, heat for an additional 10 seconds as needed, microwave power may vary
Peel off the cake and place it flat on a wire rack to cool
Chill the whipping cream in the fridge, add 20g sugar and beat until slightly stiff, then mix in 2 tbsp white peach jam
Place 3 cooled cake layers on a cutting board, press one on top of the other, you can use 4 or 5 layers of cake
Spread the whipped cream in the middle of the cake layers, roughly smooth it out, leaving the end of the cake without cream
Fold the other 3 sides of the cake layers inward
Roll up from left to right, then chill in the fridge for at least half an hour
Take out the chilled towel roll, sift a small spoonful of matcha powder on the surface (amount not specified in the recipe); cut a piece of decorative parchment paper, wrap it up and it’s ready to serve
