Prepare all ingredients. Start by preparing the flour. Why use egg yolks? Because it makes the cookies less hard.
Separate egg whites and yolks into a bowl, then add white sugar to the yolks and mix well. Sift the flour into a container and make a well in the center. Pour the egg yolk mixture into the flour and knead into a dough. If it feels dry, add some fresh milk to adjust the consistency to be moderately moist. Do not make it too wet, as it will be sticky and difficult to shape with molds.
When kneading the dough, be sure to slowly add milk, or it may become too runny.
