Beat one free-range egg, pour into warm milk, and mix well.
Place an appropriate amount of water in a pot, place a steaming rack inside, pour the mixed egg liquid onto the rack, cover with a lid. (Some suggest sieving the milk mixture like making egg tarts, but it’s not necessary. Keep things simple when cooking daily, although sieving will result in a smoother texture.)
Bring the water in the pot to a boil over high heat, then reduce to low heat and steam for 5 minutes, followed by turning off the heat and letting it sit for another 5-10 minutes. Serve cold to feed your baby! I got distracted while cooking and forgot about the time, so it may look over-steamed, but the texture remains tender and smooth.
