Wash the peaches and cut each one into 8 pieces. Place them in a large bowl and set aside.
In a deep cooking pot, pour in 2 cups of water, sugar, lemon juice and zest, and heat until the sugar is completely dissolved.
Pour the cooked lemon syrup into the bowl with the peach pieces.
Stir well and cover with a plate to ensure that all the peach pieces are soaked in the syrup. Place in the refrigerator for at least 4 hours.
