First, make the crust by sifting the flour into a bowl.
Add diced butter, which does not need to be softened.
Rub with both hands until it looks like coarse cornmeal.
Add water and knead into a dough, wrap it in plastic wrap, and refrigerate for 1 hour.
Place the relaxed dough on a floured surface and roll it into a round shape.
Place it in a non-stick baking pan and prick it with a fork to prevent it from expanding during baking.
Bake in a preheated oven at 180 degrees Celsius for 12 to 15 minutes until the whole crust is crispy.
While baking the crust, prepare the toppings by slicing the cherry tomatoes, kiwi, and banana, and preparing the lemon zest. (The fruit toppings can be mixed according to personal preference, but if not eaten immediately, it is recommended not to use bananas, which will turn black if left for too long.
