Step-by-Step Cooking Instructions for Monkey Mushroom Soda Biscuits
Dissolve yeast in water at 30 degrees Celsius, let it sit for a few minutes to activate the yeast. For more precise measurement, I used my electronic scale accurate to 0.01 today, hehe, laboratory level, see if I’m dedicated enough.
Sift the flour and baking soda from the main ingredients evenly, then add walnut oil and milk powder
Pour in the yeast water
Add monkey head mushroom powder and make a dough. The monkey head mushroom powder is ground by myself, for specific method refer to the recipe shared earlier at http://home.meishichina.com/recipe-201692.html
Pour the flour and monkey head mushroom powder from the additional ingredients into a bowl, add walnut oil and make an oily dough
Knead both types of dough. Cover the oily dough with a damp cloth and let it rest.
Let the water dough ferment until it doubles in size
Deflate the fermented dough, roll it into a thick sheet, and encase the oily dough tightly
Press and roll, flatten into a large sheet
Fold into 3 layers from left to right, then roll out
After rolling out, fold again, a total of 4 folds
Then roll into a thin sheet about 2mm thick, prick with a fork
Cut into square pieces. My camera broke at this point, the exposure was off. This picture didn’t turn out well. The rest were taken with my phone as a substitute to barely complete this process.
Arrange on a baking sheet lined with parchment paper. I also made some heart-shaped ones
Preheat the oven to 170 degrees Celsius for 5 minutes, place on the middle rack, bake for 10 minutes, and observe closely towards the end. If slightly undercooked, bake for an additional 2 minutes. In my oven, 10 minutes is just right
The baked biscuits are very crispy, with a natural mushroom aroma, very delicious
I also made some heart-shaped ones, for a bit of fun, I decorated a few with chocolate to make them look like Mr. and Mrs. Biscuit, just for fun.
