Detailed Steps for Making Mung Bean Pudding
Put white sugar in water and heat it to around 60-70 degrees Celsius, then add glutinous rice flour and tapioca flour in a ratio of 2:1, quickly stir to mix. At this point, the flour should be half-cooked to give it viscosity and prevent sedimentation. Add mung beans and adjust consistency by adding more flour if too thin or water if too thick. Adjust sweetness with a little fine sugar. Mix well and pour into molds.
Brush the surface of the molds with vegetable oil, pour the batter in, and steam over high heat for 30-40 minutes. Check for doneness by inserting a chopstick into the center and seeing if the batter sticks.
Finished product after removing from molds.
