Ingredients:
80g cake flour; 4 egg whites; 3 egg yolks; 30g granulated sugar (for egg whites); 35g granulated sugar (for egg yolks); 40ml salad oil; 60ml water; 1 tsp corn starch; 2 drops lemon juice; 1 drop red food coloring.
Additional ingredients:
180g animal whipped cream; 20g granulated sugar; 3 strawberries; cocoa powder, to taste; hot water, to taste.

Steps to make New Year’s Happy Cake Roll
Prepare the ingredients and separate the egg whites and yolks (use 4 egg whites and 3 egg yolks).
Add 35g granulated sugar to the egg yolks and beat until foamy.
Add water, salad oil, and lemon juice to the egg yolk mixture and stir well.
Sift in cake flour and corn starch to the egg yolk mixture and mix well.
Use a whisk to mix the batter until smooth.
Add 30g granulated sugar to the egg whites in two parts and beat until soft peaks form.
When lifting the whisk, the egg whites should form a sharp peak.
Add one-third of the beaten egg whites to the egg yolk mixture and mix well.
Pour the remaining two-thirds of the egg whites into the batter and fold gently until well combined.
Continue to fold until the batter is smooth and creamy.
Add a drop of red food coloring to a portion of the batter and mix well.
Transfer the batter to a piping bag and cut a small hole at the tip. Pipe a checkered pattern on a baking sheet lined with parchment paper and bake in a preheated 170°C oven for 1.5 minutes.
Pour the plain batter onto the baked pattern and use a scraper to smooth the surface of the cake batter.
Tap the bottom of the baking sheet with another hand to remove large air bubbles. Bake in a preheated 170°C oven for about 15 minutes.
Immediately invert the baked cake onto a cooling rack to prevent shrinkage. Remove the parchment paper while the cake is still hot and cover it back up.
When the cake has cooled to room temperature, place a clean piece of parchment paper on top and flip it over. Cut off the edges of the cake and make shallow cuts 2cm apart around the cake.
Whip the animal whipped cream with granulated sugar until stiff peaks form. Spread the whipped cream on the cake and place the strawberries on top.
Roll up the cake slowly and wrap it in parchment paper. Chill in the refrigerator for 1 hour to set.
Mix cocoa powder with a little hot water and use a toothpick to write “New Year’s Happy” on the cake roll. It’s ready to serve!
