Steps to make 【Northeast China】Nian Gao Bing Zi
Mix glutinous rice flour and water to form a soft dough. Adjust the amount of water according to the type of glutinous rice flour used. Let the dough rest for 10 minutes.
Take a piece of dough and shape it into a round cake with your hands.
Add sweet bean paste to the center of the cake. Try to add as much as possible. I used red adzuki beans cooked with sugar to make the sweet bean paste, but you can use ready-made red bean paste or other types of sweet bean paste.
Quickly wrap the cake around the sweet bean paste and seal it tightly.
Heat a flat-bottomed pan over low heat and brush it with oil. Place the cake directly on the bottom of the pan and pat it with your hand. Make one cake at a time and do not make them in advance. The size can be adjusted according to your preference.
Cook the cake over low heat until it takes shape, flipping it over to cook both sides.
When the cake is fully cooked and golden brown, it is ready to serve.
