【Northeast China】Red Bean Paste Mooncakes Cooking Steps
Start by stir-frying the cake flour, put the flour in a pan, and stir-fry over low heat.
Continue to stir-fry until the flour turns slightly yellow and releases a fragrant aroma, then remove from heat and let it cool.
Add cooked salted egg yolks to the red bean paste.
Then add granulated sugar to taste.
Add an appropriate amount of cake flour and knead into a smooth dough.
Prepare the mixed nuts filling. Roast and crush cashews, walnuts, peanuts, and sunflower seeds, then mix with cooked black sesame seeds, granulated sugar, and lard.
Weigh 30g of dough and 15g of filling for each mooncake.
Take a piece of dough, add the mixed nuts filling.
Seal and shape it into a round mooncake.
Repeat the process for the remaining mooncakes.
Use a 50g mooncake mold, dusted with cake flour, press the dough to shape the mooncake.
Once all mooncakes are shaped, they are ready to be served as all ingredients are cooked.
