Detailed Steps for Cooking Nutritious Black Fish Soup
First, remove the scales from the black fish, then clean out the intestines and internal organs from the fish’s belly, and remove the gills as well. Be careful not to break the gallbladder inside, or the fish will taste bitter.
Cut several horizontal and vertical slits on the back of the cleaned fish.
In a pot, bring water to a boil, then gently place the fish in and blanch it to remove the fishy smell.
Refill the pot with clean water, add the fish, cover with a lid, bring to a boil over high heat, then simmer for about 1 hour. The soup is ready when it turns white.
Prepare chopped green onions, cilantro, salt, and MSG.
Season the soup to taste. You can also add white pepper and a splash of white vinegar if desired.
