Prepare the ingredients, choose high-quality pork ribs for better taste. Boil water before cooking.
Blanch the pork ribs in hot water, then remove from heat when water boils.
Cut scallions into sections, slice ginger. Peel and wash garlic cloves.
Mix light soy sauce, dark soy sauce, oyster sauce, and salt to make the sauce.
Dissolve starch in water to make a slurry.
Heat oil in a pan, stir-fry ginger slices.
Add scallions and stir-fry until fragrant.
Add rock sugar and stir until melted.
