Ingredients needed for old dough.
Place all ingredients in the bread machine, mix well, and start the fermentation program.
Ingredients needed for the main dough.
After the fermentation program is completed, the old dough is full of bubbles and has fermented well.
Add the ingredients for the main dough except for the butter into the bread bucket, and start the kneading program.
Knead until the dough is moderately stretchy.
Add the butter, then start the kneading program again.
Knead until the dough is very stretchy, forming a good membrane.
Let the dough ferment for half an hour, (you can let it ferment in the bread machine or in the oven, depending on your preference) then remove, deflate, divide into small doughs, shape, and let them rest for five to ten minutes.
Shape the small doughs into long shapes.
Roll them up and cut them in the middle.
Place them on an oiled baking sheet.
Let them ferment in the oven for about 30 minutes, placing a bowl of hot water in the oven to increase humidity.
Once the dough has fermented, brush the surface with water, then bake in the oven at 180 degrees for 15 minutes. Remove from the oven and it’s ready to serve.
