Detailed Steps for Making Old Yogurt Steamed Cake Roll
Sift the low-gluten flour
Prepare the butter, put it in a small milk pot, and simmer over low heat until boiling
Quickly pour it into the low-gluten flour and mix well with a scraper
Beat the egg yolks in a bowl and stir well
Heat 65g of milk until small bubbles appear on the edge, and then pour it into the egg mixture. Remember to stir while adding it
Pour the egg mixture into the dough in three batches, and stir well before adding the next batch
The final state
Add granulated sugar to the egg whites in three batches and beat until it forms a dry bend shape, as shown in the picture. If it is beaten too much, the cake body will be easy to crack. Preheat the oven with upper and lower tubes at 170 degrees Celsius
Add the egg paste to the batter in three batches and mix well
Pour the mixed batter into a gold plate. I used a three-function gold plate, so I didn’t put oil paper and it wouldn’t stick
Push it to the four corners with a scraper, shake it a few times, and then shake out the big bubbles
Put it on the middle layer of the preheated oven and bake for about 20 minutes
