Steps to Make Orange Cake
Wash one orange thoroughly and cut the orange peel into small pieces. The smaller, the better. See the picture.
Separate egg yolks and whites into two bowls.
Squeeze the juice of two oranges and mix it with the egg yolks.
Add corn oil and granulated sugar to the egg yolk mixture. Stir quickly and evenly.
Sift 90g of cake flour into the egg yolk mixture.
Add the chopped orange peel to the egg yolk mixture and stir well to make the egg yolk batter.
Put the egg whites into a clean, oil-free and water-free bowl. Add a few drops of vinegar or lemon juice.
Add one-third of the granulated sugar to the egg whites and beat at low speed until coarse foam forms, as shown in the picture.
Beat at medium speed for 25 seconds, then switch to low speed to make the large bubbles become fine and clear. Add another one-third of the granulated sugar. Continue to beat at low speed until the batter becomes more delicate and the lines are clearer. Add the remaining one-third of the granulated sugar. When the egg white batter is shiny and the mixer has resistance, lift the mixer and the egg white batter forms a big hook.
Add one-third of the egg white batter to the egg yolk batter and mix well from the bottom up.
Add another one-third of the egg white batter to the egg yolk batter and mix well from the bottom up.
Pour all the egg yolk batter into the egg white batter and mix well from the bottom up. Do not stir in circles.
Pour the batter into an 8-inch mold. Gently shake it to remove air bubbles.
Place the mold in a 42-liter oven, use the water bath method, and bake at 160 degrees Celsius for 45 minutes. The temperature and time settings may vary depending on the brand and size of the oven.
Remove the cake from the mold and cut it into pieces.
Finished product. How about having a piece for breakfast?
