Orange Fragrant Peanut Sesame Mooncake Cooking Steps
Prepare inverted sugar syrup, medium gluten flour, and alkaline water (edible alkali mixed with water in a 1:3 ratio).
Add cooking oil.
Pour in alkaline water.
Mix well.
Sift in the flour.
Knead by hand, let it rise for 1-2 hours.
Prepare peanuts, roasted white sesame seeds, roasted black sesame seeds, and orange honey juice.
Microwave peanuts for 5 minutes, remove the red skin; grind into coarse powder with a blender.
Put peanut powder, black and white sesame seeds in a bowl, pour in orange honey juice.
Add cake flour, pour in melted lard; mix well to form the filling.
Divide the dough and filling into 12 portions each.
Take a portion of dough, place the filling inside.
Wrap the dough around the filling, slowly push the dough upwards to cover the filling.
Roll into a ball, ensuring the dough is evenly thick to prevent filling from leaking out.
Sprinkle cake flour in a mold, shake a few times, place the mooncake dough inside.
Line a baking tray with foil, press the mooncake dough into shape; spray a little water on top.
Preheat the oven, place the baking tray in the preheated oven; bake for 5 minutes to set.
Beat an egg yolk with a tablespoon of egg white.
Remove the baking tray, brush the mooncake dough with the egg mixture.
Bake in the oven, top and bottom heat, at 160 degrees for 15 minutes.
