Steps to Make Passion Fruit Cupcakes
Prepare the ingredients. Remove the pulp from the passion fruit.
Put the passion fruit and 10ml water into a blender and blend until smooth.
Separate the egg yolks and egg whites. Make sure the bowl for the egg whites is oil-free and water-free. Try not to let any egg yolk get into the egg whites as it will affect the ability to beat them into stiff peaks.
Mix the egg yolks with corn oil and passion fruit.
Sift in the cake flour and mix until smooth. Set aside.
Beat the egg whites and granulated sugar until stiff peaks form. You should be able to hold a chopstick upright in the mixture without it falling over.
Take a spoonful of the egg whites and mix it into the egg yolk mixture. Mix well.
Pour the egg yolk mixture back into the egg whites and fold gently until well combined.
Remember to fold gently, not stir in circles. Fold until the mixture is smooth.
Prepare the cupcake molds and fill them with the batter until they are 80% full. Tap the molds gently to level the batter.
Preheat the oven to 110 degrees Celsius for five minutes.
Bake at 110 degrees Celsius for 10 minutes, then increase the temperature to 150 degrees Celsius and bake for another 20 minutes until golden brown.
