Detailed Steps for Cooking Peach Gum and Tremella Soup
Preparation, soak the tremella and peach gum overnight. Peach gum should be soaked until soft without hard parts, around 12 hours.
Use a toothpick to remove the black parts and rinse thoroughly.
Tear the tremella into small pieces.
Put rock sugar, tremella, peach gum, red dates in a pot.
Add several times the amount of water, bring to a boil over high heat, then simmer over low heat for about an hour and a half (1:30″) until a gelatinous texture is formed. Add goji berries in the last five minutes!
Delicious, with a soft and chewy texture, sweet and fragrant.
