Steps to Make Peanut Butter Muffins
Beat eggs and granulated sugar with an egg beater until well mixed.
Add corn oil and mix well.
Add peanut butter (I used smooth peanut butter) and mix well.
Add fresh milk and mix until a uniform liquid is formed.
Sift in the mixture of cake flour and baking powder.
Mix the batter with a scraper in an irregular direction until it is uniform. This step only requires mixing the dry and wet ingredients, and the batter still appears as small particles.
Cover the batter with plastic wrap and let it sit at room temperature for about 30 minutes.
Scoop the batter into the mold with a spoon, filling it about 80% full.
Preheat the oven to 175 degrees Celsius and bake for 25-30 minutes. (Adjust the temperature according to your own oven)
