Step-by-Step Cooking Instructions for Pearl Milk Tea Mousse
Prepare all ingredients and cut out 6 cake slices that can fit into the jar along the diameter.
Soak gelatin sheets in cold water and set aside.
Pour milk into a saucepan, add the black tea bag, bring to a simmer, then turn off the heat, cover, and let it cool to room temperature.
Bring 1000g of water to a boil in a pot, add quick-cooking tapioca pearls, cook for 3 minutes, then turn off the heat, cover, let it sit for 2 minutes, rinse with cold water, and set aside.
Take an egg yolk, add 5g of sugar, and beat until the color lightens.
Lower the temperature to around 60°C, slowly pour the black tea milk mixture into the egg yolk mixture while stirring constantly.
Pour the softened gelatin into the egg yolk mixture and mix well.
Take the whipping cream out of the refrigerator, add 15g of sugar, beat until 60% whipped, with visible lines but still flowing.
Slowly pour the gelatin mixture into the whipped cream, stirring slowly until well combined.
