Detailed Steps for Pickled Bean Stir-Fried Water Spinach
You can refer to the recipe that Heart Sister just posted for the method of making Spicy Pickled Beans.
Cut off the tail leaves of the water spinach and use them for other dishes. The 500g of ingredients is the weight after removing the tail. Wash the water spinach stems and cut them into small pieces.
Heat the wok with cold oil. Put in garlic, chopped pickled peppers, and sliced Thai chili and stir-fry until fragrant.
After the wok is fragrant, add the spicy pickled beans and stir-fry evenly.
After stir-frying evenly, don’t stir it anymore. Let the pickled beans fry a little bit to remove some of the moisture. When the water is slightly dried, the fragrance of the pickled beans will come out. Repeat this step to fry the pickled beans until they are fragrant.
Before adding the water spinach, gently press it with your hand to create a few cracks in the stems, which will make it more flavorful when stir-fried.
Stir-fry the water spinach evenly over high heat, then add sugar and oyster sauce and stir-fry until well combined.
When the water spinach is cooked, it can be served without thickening the sauce or adding any garnish oil.
