Steps to Cook Pig Trotters with Ginger
Boil water in a pot with ginger slices and cooking wine, blanch the pig trotters (about 3 minutes), remove and rinse clean, boil eggs until cooked and peel them.
Pour the blanched pig trotters into a clay pot, add plenty of ginger slices, pour in a bottle of sweetened black vinegar (use the amount of 1/2 pig trotter with one bottle of vinegar, no need to add water), bring to a boil over high heat, then simmer over low heat for about forty minutes.
Add boiled eggs, season with salt and brown sugar.
Simmer over low heat for twenty minutes.
It’s better to let it sit overnight and reheat it the next day for better texture, the leftover sweet vinegar can be reused.
