Prepare the ingredients and slice the beef
Slice the pineapple and green pepper
The key to good beef flavor is in the beef marinade. First, slice the beef thinly and mix with appropriate amount of salt, cooking wine, soy sauce, and oyster sauce.
Add water to the beef mixture, but do not add all the water at once. Add a little water and mix with your hands until the beef becomes slightly dry and sticky. Then add more water and repeat the process 2-3 times. Add the egg yolk and mix until fully incorporated into the beef mixture.
Add cornstarch and mix well
Heat up the wok and stir fry the beef until it turns slightly white. Turn off the heat and continue to stir fry until fully cooked (this step is important to prevent the beef from becoming tough). In another wok, stir fry the green pepper.
