Detailed Steps for Cooking Pineapple Filling
Choose one pineapple, I bought a 3-pound one and took 800g of flesh
Cut half of it into three pieces, so that the skin can be peeled off thinner
Cut the pineapple flesh into small pieces and remove the skin. There are basically no thorns inside the pineapple, so the skin can be cut very thin and close to the flesh
Cut the flesh into thin strips
Add brown sugar, note that it is brown sugar, not red sugar. The sugar I bought is imported and a bit expensive. Ordinary brown sugar is also fine, and if you don’t have any, slightly reddish brown sugar will also work
Mix the sugar and pineapple strips evenly, and marinate for more than ten minutes until the sugar melts
Cook over low heat, stir constantly when it becomes thick
Keep cooking until there is no more liquid inside
Add maltose
Continue to stir until it can be formed into a ball
