Detailed Steps for Cooking Pork in Tomato Sauce
Cut the pork tenderloin into thin slices about 1cm thick and tenderize with the back of a knife.
Cut the slices vertically into 1cm strips.
Add salt, pepper, an egg white, a tablespoon of cooking wine to the pork strips, mix well, and marinate for 15 minutes.
Add water to cornstarch to make a smooth batter. The batter should have a stringy texture when lifted, not too thin, to coat the pork evenly.
Add two tablespoons of cooking oil to reduce stickiness, then coat the marinated pork strips evenly with the batter.
Prepare a sauce in a bowl: 5 tbsp tomato sauce, 3 tbsp white sugar, 1 tbsp white vinegar, half tbsp salt, 4 tbsp water mixed with cornstarch, stir well.
Heat oil in a pan until it reaches 60% heat, and bubbles form rapidly when a chopstick is inserted.
Fry the pork strips in batches until lightly golden and set, then remove from the oil.
