Soak the soybeans for a shorter time, about 30 minutes. Just immerse the dried soybeans in cold water. If you buy fresh soybeans, it will be much easier. Also, soak the goji berries in clean water.
It generally takes 3-4 hours to rehydrate dried kombu. If the texture is harder, you can soak it for a bit longer, but not more than 6 hours. Prolonged soaking will cause the nutrients in the kombu, such as water-soluble vitamins and minerals, to dissolve in the water, reducing its nutritional value. It’s best to change the water once or twice during soaking. If you have fresh kombu, just rinse it and cut it into regular shapes.
After purchasing the pig trotters, soak them for about 2 hours to remove any blood.
