Prepare the side ingredients, cut them into large pieces to prevent them from being crushed in the pressure cooker.
Put the beef in cold water with ginger slices and cooking wine to remove blood, then rinse it clean.
Cut the beef into large pieces, use an old pot to caramelize the beef (because of the large bones, they may scratch the bottom of the pot). Stir-fry for a while until it browns, then pour in cooking wine along the edge of the pot and cook for a while.
When most of the beef’s own moisture has evaporated, pour in boiling water to cover the beef, bring to a boil over high heat for two minutes.
