Ingredients
Pour all dough ingredients except butter into a large bowl
Knead into a uniform dough, add butter
Continue kneading until smooth and elastic
Place in a bowl for basic fermentation
Dough rises
Deflate, divide into 3 equal parts, shape into rounds
Divide the purple sweet potato filling into three equal parts
Take a piece of dough, flatten it, wrap in the filling
Seal with the seam side down, let it rest for 10 minutes
Press into a round disc about 8cm in diameter, proof for another 20 minutes
Use a fork to make three marks on the surface at equal intervals, continue proofing for 5 minutes
Bake in the oven, middle rack, top heat 190 degrees, bottom heat 160 degrees, for about 18 minutes
Golden brown surface, remove from the oven
Cool slightly before serving
