Soak an appropriate amount of agar in cold water until softened
Steam the purple sweet potatoes until cooked, peel and mash them into a paste
Boil water in a pot, add sago and cook until translucent
Add coconut milk and sugar to the purple sweet potato paste, mix well. For a stronger milk flavor, you can also add milk
In a pot, add cold water, dissolve the soaked agar, then add the sweet potato paste and mix well
After cooking, let it cool slightly, pour into various molds, refrigerate for 2 hours
When pouring the purple sweet potato paste into the pudding bottles, remember to strain it with a filter. After settling, there will be a clear separation. The texture will be noticeably different after refrigeration. Other molds do not need to be strained, as purple sweet potatoes themselves have a high starch content and can be cut into cold cakes for consumption
