Detailed Steps for Making Purple Sweet Potato Steamed Cake
Steam the purple sweet potato until it is cooked and let it cool, then peel off the skin.
Mash the sweet potato with a spoon, or use a food processor to make it into a paste with a little water. The surface of the steamed purple sweet potato cake will be smoother if it is made into a paste.
Add flour and granulated sugar, and knead the purple sweet potato paste and flour together by hand, making the sweet potato pieces as small as possible.
At the same time, soak the yeast in a little cold water. In cold weather, warm water can be used to activate the yeast.
Pour the yeast mixture onto the purple sweet potato and flour mixture, stir with chopsticks, and gradually add cold water and flour. Do not add all the water at once, but add it gradually while stirring with chopsticks until it becomes lumpy.
Knead the dough by hand until it is soft and elastic, not too dry, and can be shaped by hand.
Pour an appropriate amount of water into the inner pot of the rice cooker. The scale of each pot used at home is different, so I poured the water near the minimum water level.
Place the inner pot in the rice cooker, put the purple sweet potato dough in the steamer of the rice cooker, and apply a layer of oil or oil paper, or steaming cloth to the steamer in advance, then cover the lid for fermentation.
Open the lid to check the degree of fermentation. Because it is summer, it only took about 30 minutes to ferment well, to the point where the top of the dough reached the lid of the pot, and the surface was brought down with it. It’s okay, just take it off and gently stick it back on.
Connect the power supply, select the “Steam” function, and set the time to 40 minutes, because the water in the pot is cold, and time needs to be reserved for boiling water.
After 40 minutes, let it sit for 5 minutes before opening the lid to prevent the surface from shrinking due to rapid cooling.
It looks full and plump.
The texture is good.
It is very soft and fluffy.
