Follow the method for an 8-inch chiffon cake, but halve the ingredients to make a 6-inch chiffon cake. Let it cool upside down and then remove from the mold.
While the cake is cooling, cut the canned yellow peaches into pieces and drain the liquid.
Whip the whipped cream with granulated sugar until it reaches a piping consistency. Whip at low speed to avoid over-whipping and separation of water and oil. The cream should form clear patterns and be in a non-flowing state.
Slice the cake horizontally into two layers, spread a layer of cream evenly on the bottom layer, and sprinkle with yellow peach pieces.
Spread cream on the yellow peach pieces and smooth it out. Place another cake layer on top, then use cream to smooth the surface and edges.
