Slice the soaked mushrooms and set aside.
Cut the spring onion into sections and shred the ginger for later use.
Slice the chicken gizzards, mix with shredded ginger, spring onion, light soy sauce, a small amount of sliced mushrooms, and peanut oil for marination.
Bring the white congee to a boil.
