Detailed Steps for Cooking Red-Cooked Mandarin Fish
First, clean the mandarin fish.
Kill and clean the fish, marinate with ginger, spring onion, cooking wine, and salt for 30 minutes.
Heat oil in a pan, fry the fish until golden brown on both sides.
Remove the fish from the pan and add lard.
Sauté spring onion, ginger, garlic, onion, green chili, and spicy girl together until fragrant.
