Detailed Steps for Cooking Red Date Bird’s Nest
Prepare the ingredients: one bird’s nest triangle, 4 red dates, and 2 small pieces of rock sugar (or ice sugar). Weigh the bird’s nest triangle, which is about 4.6g. The bird’s nest triangle is a cost-effective option for daily nourishment at home.
Soak the bird’s nest triangle in purified water (preferably purified water, as tap water may affect the soaking process) for 4-6 hours. Soak the harder parts of the bird’s nest triangle longer or tear them into small pieces when they become softer. This is our bird’s nest triangle after soaking for about 4 hours, with a soaking rate of 8 times! (The normal soaking rate of bird’s nest is 6-8 times, and the higher the quality, the higher the soaking rate).
After soaking, tear the bird’s nest triangle along the grain into strips. Be careful not to break them (the finer the strips, the easier they are to clean). Wash the strips with a strainer or sieve 3 times, and then use tweezers to remove any remaining small hairs (our bird’s nest has a cleanliness rate of 90%-95% after washing with a sieve, so there is no need to remove any more hairs).

Put the bird’s nest and red dates into a stewing pot, generally adding purified water in a ratio of 1:40 to the bird’s nest. Stew until the bird’s nest is neither too thick nor too thin, or according to personal preference. I prefer it to be a little thinner, so I added more than 150ml of water. Then plug in the power and start stewing. The stewing time is generally about 30 minutes, but because the power of each electric stewing pot is different, the first time you stew, observe it every 20 minutes. If the bird’s nest is already sticky, it is basically done.
I add the rock sugar after the bird’s nest is stewed, then turn off the power, let it sit for a while, and stir it with chopsticks. (Because stewing bird’s nest with rock sugar (or ice sugar) can cause the bird’s nest to dissolve, it is recommended to add it after stewing). Now you have a bowl of fragrant red date bird’s nest.
