Steps to Make Red Date Walnut Cake with Brown Sugar
Prepare all the necessary ingredients. (Note: The photos show 2 eggs, but an additional egg was added later for beating.)
Prepare the walnuts.
Soak the red dates in warm water for about 20 minutes, then rinse and remove the pits. Grind the red dates in a food processor until fine.
Cut the walnuts into small pieces.
In 135g of water, add the ground red dates and mix well. Then add 50g of sunflower seed oil and stir until well combined.
Mix the vanilla powder and all-purpose flour together and sift. Then add to the red date paste and mix well.
Beat the eggs in a clean mixing bowl. Add 60g of brown sugar, 20g of granulated sugar, and 0.5g of salt. Use a hand mixer to mix until the sugar is dissolved. (Note: Use 3 eggs instead of 2 as shown in the photos.)
In another bowl, add some hot water (about 40 degrees Celsius) and place the mixing bowl inside. Use an electric mixer to beat the egg mixture on low speed, then high speed until the mixture thickens and the dripped egg batter can stay on the surface without disappearing.
Add 1/3 of the beaten egg mixture to the red date paste and mix well.
Then add the remaining egg mixture.
Add the chopped walnuts.
Quickly mix until well combined. (Note: Do not stir in circles and keep the movements light and fast to avoid deflating the egg mixture.)
Line the baking pan with oil paper or oil cloth to prevent sticking. Pour the cake batter into the pan and tap it lightly on the table to remove any large air bubbles. Preheat the oven for 10 minutes at 175 degrees Celsius and bake for 25 minutes or until cooked. Note that the time and temperature are for reference only and should be adjusted according to the performance of your own oven.
