Detailed Steps for Making Red Sugar Steamed Bun
Dissolve yeast in warm water. The ratio of water to flour is usually 1:2. Once you get the hang of it, you won’t need to measure the water anymore. Adjust the water amount as needed when kneading the dough. I added some ready-made red sugar water without measuring and forgot to take a photo. Also forgot to include the baking soda in the photo.
Add corn oil to the low-gluten flour, knead into a dough with red sugar water and yeast water, then let it ferment in a pot with warm water for 2 hours.
After 2 hours of fermentation, the dough will increase in volume. Knead the dough again to release the gas. If the dough is too wet during kneading, you can add some flour as needed. Once the dough is smooth, shape it and let it ferment in the pot for a second time. After 25 minutes of second fermentation, steam over high heat with cold water.
Steam for 12 minutes, then let it sit covered for 5 minutes before removing from the pot.
The texture is relatively fine, the softer the dough, the chewier the steamed bun.
