Prepare the dough ingredients.
Prepare the dried fruits. (Walnuts, raisins, cranberries, chop them slightly before use.)
Pour all ingredients except dried fruits and butter into the stand mixer.
Knead into a uniform dough, then add softened butter.
Knead until fully combined, and a thin, smooth film can be pulled out.
Add chopped dried fruits.
Continue kneading until the dough evenly wraps around all dried fruits. Then shape into a round and let it ferment.
Ferment until more than double in size.
