Steps for making Red Yeast Rice Wine Toast
Take 100g of homemade rice wine and dilute it with water. I used rice wine to give the toast a pink color, but you can also use rice instead of water, which will turn the toast red. Add 220g of flour to the rice wine mixture and stir until it becomes a thick paste.
Naturally ferment until it doubles in size and forms a honeycomb structure inside. The rice wine mixture is already well-fed.
Add eggs and rose sugar syrup. The red liquid is the syrup of rose sauce.
Add the remaining high-gluten flour and salt.
Mix in softened butter with a mixer for about 2 minutes until there is no dry flour left.
Mix at speed 1 for 3 minutes, then stop and let the dough rest for 10 minutes. Mix at speed 2 for 10 minutes.
Knead the dough until it reaches the expansion stage.
You can stretch a thin and elastic glove film.
Cover with a damp cloth and let the main dough ferment until it doubles or triples in size, but be careful not to over-ferment the dough. The rice wine dough will ferment more slowly, so observe it carefully.
Divide the fermented dough into 6 portions, deflate and cover with a damp cloth for 10 minutes.
Roll the relaxed dough into a long shape and then roll it up.
Place it in a toast mold.
I use a baking tray with water to keep the toast moist and ferment it at 38 degrees Celsius for about 50 minutes until it is 80% full. The bottom of my oven is a heating plate, so I can pour water directly on it. If it is a heating tube, you can put a bowl of water in it to keep it moist.
Preheat the oven to 180 degrees Celsius, bake for 35 minutes, and then shake the mold and remove it immediately.
Cool and slice. The inside is light pink, which I like.
The toast is so soft that it can be pulled into strands, as you can see.
