Detailed steps for cooking Refreshing Green Tea Flavor – [Green Tea Mantou Roll]
Weigh all the ingredients.
Add yeast to warm water and let it sit for a moment until the yeast is completely dissolved.
Add half of the flour to the green tea powder and half of the sugar, and mix well.
Add half of the yeast water and stir with chopsticks until it becomes lumpy.
Knead into a smooth green tea dough.
Use the same method to knead the other half of the flour with the remaining sugar and yeast water into the original dough. Cover the kneaded dough with plastic wrap and let it ferment for about half an hour.
Take out the fermented green tea dough, release the gas, knead it into the size of the original dough, and then roll it into a rectangular sheet.
Use the same method to roll the original dough into a smaller sheet, place it on top of the green tea sheet, and then roll it slightly with a rolling pin to make the two sheets stick together.
Roll up the sheet from the top or bottom, with the seam facing down.
Place it on a cutting board and cut it into small mantou pieces.
Place the mantou pieces on a rack with a thin layer of oil, and then put them in a pot of cold water. Let them ferment again until they are 1.5 times larger than their original size.
Bring the water to a boil over high heat, then reduce to medium heat, steam for about 5 minutes, turn off the heat, and let it sit for 2-3 minutes before opening the lid.
