Ingredients for Mousse
Ingredients for 8-inch Chiffon Cake
Separate egg yolks and whites, beat egg whites in three parts, adding 20g sugar each time, until the whites form soft peaks. Then refrigerate the beaten egg whites. Add 30g sugar to the egg yolks, gently mix with a whisk, do not overbeat.
Add 40g olive oil and 40g milk to the beaten egg yolks, mix well. Add sifted flour to the egg yolk mixture, fold gently with a rubber spatula. Add 1/3 of the beaten egg whites to the egg yolk batter, gently fold in with the spatula, then pour the egg yolk batter into the bowl with the remaining egg whites and fold gently. Pour the cake batter into the mold, tap the mold on the table twice to remove large air bubbles inside.
Place in a preheated oven, top and bottom heat, 170°C, for about 45-50 minutes.
Once baked, immediately invert the cake to cool, then remove from the mold and slice for later use.
Steam the pumpkin until soft and remove the skin.
Puree the steamed pumpkin in a food processor.
Add some sugar and 100g milk to the pumpkin puree, mix well.
